This homemade peanut butter granola is crunchy, lightly sweetened with honey, and packed with protein from collagen.

Ingredients

  1. Preheat the Oven: Set to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine oats, cinnamon, salt, and collagen powder.
  3. Prepare the Wet Ingredients: In a small saucepan, gently warm the honey, peanut butter, and butter (or coconut oil) until smooth. Stir in vanilla.
  4. Combine: Pour the wet mixture over the dry ingredients and stir until fully coated.
  5. Add Egg White: Fold in the frothy egg white—it helps create those crunchy clusters!
  6. Bake: Spread the granola evenly onto the baking sheet. Bake for 25-30 minutes, stirring halfway through. For extra crunch, don’t stir for the last 10 minutes.
  7. Cool Completely: It will crisp up as it cools.
  8. Store: Keep in an airtight container at room temperature for up to 2 weeks.

  • Organic berries (We use frozen organic berries from Costco and thaw them before eating)

Simply mix the honey and whey protein into the yogurt first, then top with berries and granola. It’s the perfect nutrient-dense, protein-packed snack or quick breakfast!
